Usage
[Cooking instructions (4 to 6 servings). You will need: 250 ml (1 cup) Aunt Caroline rice. 1.5 litres (6 cups) water. 5 ml (1 tsp) salt. Stove: 1. Place Aunt Caroline Rice, water and salt into pot. 2. Bring to the boil uncovered. 3. Boil on the stove for 20 – 25 minutes. 4. Remove from heat. 5. Drain off excess water and serve. Microwave: 1. Place Aunt Caroline Rice, water and salt into a microwavable dish. 2. Microwave on a medium/high setting for 20-25 minutes. 3. Remove from the microwave and drain excess water. Allow to stand covered for 5 minutes before serving. For softer rice, simmer for an additional 5 minutes. For firmer rice, simmer for a shorter time. Akni Pilau. (4 to 6 servings). Ingredients: 500ml (2 cups) uncooked Aunt Caroline rice. 1.25 L (5 cups) water. 5ml (1 tsp) salt. 60ml (4 tbsp) margarine or butter. 1 onion, sliced. 500g mutton, cubed. 3 green chillies, sliced. 3 cloves garlic, crushed. 10 ml (2 tsp) cumin, ground. 5 ml (1 tsp) turmeric, ground. 5ml (1 tsp) garlic and ginger paste. 1 tomato, grated. 3 medium potatoes, cubed. Salt to taste. 125ml (1/2 cup) water. 250ml (1 cup) frozen peas. Method: 1. Bring Aunt Caroline rice, salt, and water to a boil. Reduce heat and simmer for 15 minutes or until the rice is half cooked. Drain off the water. 2. Heat butter or margarine and fry the onion until soft but not brown. 3. Add mutton, chillies, garlic, cumin, turmeric, garlic and ginger paste and fry until the mutton is well coated with the spices. Stir in the tomato and simmer for a few minutes. 4. Add potatoes and simmer for a further 10 minutes. 5. Mix in Aunt Caroline rice and season with salt. Pour over water and cover the saucepan with a tight-fitting lid. 6. Reduce heat and allow to steam for about 25 minutes adding more water if necessary. 7. Stir in peas and allow to steam for a further 5 minutes before serving.]]
